Mary Vasquez, co-founder of Miguel’s Jr. and Miguel’s Restaurants, is the perfect example of lifelong determination and resilience. Born in Central Mexico, Mary learned traditional cooking from her mother and grandmother, later bringing those authentic flavors to California. Since opening their first restaurant in 1973, she has been the culinary heart behind Miguel’s success. Now, at 80 years young, Mary recently earned her high school diploma — proudly completing all coursework instead of accepting an honorary degree. Her inspiring journey reminds us that with heart and perseverance, no goal is ever out of reach.
